I didn't include salt in this recipe because many people like lower-sodium recipes. When I make it, I salt it up. I also add several cloves of garlic at times to give it a little more punch. Ingredients

2 T. olive oil
1 small yellow or white onion
1 1/2 c. white beans
2 c. sliced zucchini
1/2 pkg (10 oz) frozen spinach
1 c. cooked barley
3 c. vegetable broth
1 T. dijon mustard
1 T. curry powder
1 bay leaf
2 T. Nutritional Yeast
1 T. Miso paste
Directions
Heat olive oil in a large skillet over medium heat. Add diced onion and cook 3 to 5 minutes or until onion is soft.
Combine onion and all remaining ingredients, except nutritional yeast and miso paste, in a large pot. Bring to a simmer over medium heat. Let simmer for 3 to 5 minutes or until zucchini is tender. Do not overcook.
Remove from heat. Discard bay leaf. Add nutritional yeast and miso paste, stirring to combine.
Makes 4, 1 1/2-cup servings
