Health Choice Breakfast Quiche

Introduction

A healthy version of the miracle quiche that needs no crust, but makes its own. You can add spinach,, drained and chopped, but it will increase the sodium, which is already pushing the limit. Number of Servings: 8

Ingredients

    Eggs, 4 large
    Black pepper, 1/4 t.
    Milk, 1%, 2 1/4 C.
    Heartsmart Bisquick, 3/4 C.
    onion, 1, chopped and softened in a nonstick skillet
    Cheddar, low fat, 1 1/4 cup, diced or shredded
    Louis Rich Turkey Bacon, 4 sl., browned and chopped
    Smart Balance Buttery Spead, 8 tbsp.

Directions

Serves 8. Bake in Quiche pan for best results. Can use 9" deep dish pie pan.

Put eggs in blender, blend until frothy. Add pepper, milk, bisquick, onions that have been lightly sauteed with no fat, bacon slices, and the cubed or shredded cheese. Blend just until mixed but not mushy. Leave cheese and bacon in large chunks.

Melt Smart Balance Buttery spread in quiche pan just until barely melted. Pour ingredients from blender into spread. Bake at 350 degrees for 50-60 minutes. Cool about 5 min before cutting into 8 equal pieces. Serve with sliced fresh fruit on the side (fruit not included in nutrition count).
