I was looking for a good protein breakfast that was a change from my usual cereal or oatmeal and discovered this tasty concoction. I hope you enjoy it as much as I do. I was looking for a good protein breakfast that was a change from my usual cereal or oatmeal and discovered this tasty concoction. I hope you enjoy it as much as I do.

Ingredients

    -1/4 C Rosarita refried black beans
    -1/2 T Hormel's 50% reduced fat bacon bits
    -1 Egglands Best egg
    -1/4 C Kraft's 2% milk shredded Mexican Four Cheese blend
    -1 T Salpica's Habanero Lime Salsa

Directions

--Stir the bacon bits and refried beans together and then spread your beans on your dish and heat them up. It only took me about 25-30 seconds in the microwave on high.

--MEANWHILE, heat your skillet over med/low heat and then lightly spray it with cooking spray. Cook your egg until the whites begin to sizzle then flip and turn off the heat.

--Carefully transfer your egg on top of the beans then top with the cheese then the salsa.

--Enjoy!!
