Tomato Bisque

Ingredients

    1 tbsp Butter
    1 large onion
    1/2 cup chopped carrots
    1 celery stalk
    28 oz can Crushed tomatoes
    2 cans Chicken Broth
    2.5 tbsp basil leaves
    3 bay leaves
    1/2 tsp pepper
    2 tbsp reduced fat sour cream

Directions

Saute the vegetables in the butter until soft.
Add tomatoes, broth and herbs. simmer for 20 minutes covered. Remove the lid and simmer for another 15 minutes. remove the bay leaves, add sour cream and blend with a wand blender.
