about 500 gr. zucchini diced small
300 gr. cheese, grated
1/4 cup ricotta
(vegetables and cheese can be of choice, I happen to love Zuc, and will also add sliced mushrooms)
Lightly grease 8 x 11" pan and pour in contents.
Sprinkle ricotta on top and sweet paprika.
Bake at 350 for 30-40 min.
Serves 8 at ~220 cal. for main dish. Use smaller serving size for side dish.
