Endive, Apple & Walnut Salad



Introduction

Ingredients

    1 head Belgian endive, trimmed
    1 apple, cored and cut into 1/2-inch dice
    1/4 cup Swiss cheese, cut into 1/2-inch dice
    1/4 cup chopped walnuts, toasted
    snipped fresh chives

    For the vinaigrette:
    2 Tbsp. rice wine vinegar
    1 Tbsp. canola oil
    1 Tbsp. extra-virgin olive oil
    Pinch of sugar
    Pinch of salt

Directions

Serves 2.

Cut endive in quarters lengthwise, then slice crosswise into 1/2-inch pieces. In a medium bowl, toss toss endive, apple, walnuts and Swiss cheese.

In a lidded jar, add vinaigrette ingredients; cover and shake briskly to combine.

Drizzle vinaigrette over salad to taste; toss gently. Add snipped fresh chives and several grinds of fresh cracked pepper.

  • In my opinion (I haven't made salad yet) this is a 2-serving sized salad. I'll add that I do have diabetes and usually my food allowance gives me 1/2 apple and lettuces about 1 1/2 cups lettuce. The full salad would be a very generous amount for a single person. - 11/8/12

  • Sounds delightful, but that's an enormous number of calories for one salad serving! 13 Points for Weight Watchers. Sadly, not an option for me. However... I am inspired to combine endive and apples in some way. I can taste it now. - 2/1/11
