Introduction

This is an EASY dish that is loved by all in my family. It is an old Weight Watcher's recipe- 4 points per serving. This is an EASY dish that is loved by all in my family. It is an old Weight Watcher's recipe- 4 points per serving.
Number of Servings: 4

Ingredients

    2 cups 99% fat free chicken broth
    1/4 flour (season it with salt and pepper)
    4 (4 oz) skinless, boneless chicken breasts
    1 can of Stewed OR Diced Tomato (I like the one with garlic and onion)
    3-4 scallions chopped.

Directions

This recipe serves 4

Pour 1/2 cup of the broth into a wide bowl, place flour mixture on a plate. Dip each chicken breast in broth and then the flour to coat both sides.

Spray a 10-inch or 12 inch non-stick skillet with nonstick cooking spray. Cook coated chicken breasts over medium heat turning once until browned on both sides- remove chicken from skillet and set aside.

Add remaining flour to the skillet, cook stirring constantly until browned. Slowly stir in 1/4 cup of broth, cook until thickened. Gradually stir in remain broth, stirring, until slightly thickened.

Add tomatoes, and scallions to the skillet and bring to a boil, reduce heat to low and return chicken to the skillet and simmer until cooked through (about 10 minutes).
