Double Delicious Bean dip

Introduction

A recipe from Jessica Seinfeld's cookbook. It is the base for her Protein Packed Grilled cheese sandwiches. The bean dip recipe makes more than you need for the sandwiches. This was a major hit with my toddler. The recipe calls for part-skim ricotta instead of cottage cheese, but I had to sub because I didn't have any on hand. Very yummy and satisfying. Ingredients

    Bean Dip:
    1 cup canned white beans, drained and rinsed
    2 tsp lemon juice
    1/4 cup low fat cottage cheese, or part-skim ricotta
    1 tsp olive oil
    1/2 clove garlic, rough chop
    1/4 tsp salt
    1/8 tsp pepper


Directions

Put bean dip ingredients in mini food processor and blend until smooth.
Serve as base for grilled cheese sandwiches, or as a dip. Great with veggie, pita or tortilla chips.
Makes 6 servings, 2 tbsp each.
