Roasted Herb Potato Wedges

Introduction

Another old Weight Watcher Recipe (from 2001), and it is SO easy but looks like you worked very hard!! And best of all, yummy! Another old Weight Watcher Recipe (from 2001), and it is SO easy but looks like you worked very hard!! And best of all, yummy!
Number of Servings: 4

Ingredients

    2 tbs dijon mustard
    1 tbs olive oil
    1 tbs rosemary, chopped
    1 tbs oregon, chopped
    1 tbs parsely, chopped
    1/2 tsp table salt
    1/2 tsp black pepper
    1 LB new potatoes (white or red skinned, cleaned and cut in half)

Directions

Preheat oven to 425 degrees
Combine all ingredients, except potatoes in a small bowl
Place potatoes in a large Zip Lock bag and then add the mustard mixture, close the back and shake to coat.
Pour contents of bag into a shallow baking pan that is coated with nonstick cooking spray.
Baking, turning occasionally, until potatoes are tender, about 25-30 minutes. 4 side servings
