Black Beans

    1 can reduced-sodium Black Beans, rinsed and drained
    1 can Rotel diced tomatoes with green chiles, do not drain
    3 cloves garlic, minced
    1/4 c onion, finely chopped
    1/4 c 2% cheddar cheese, shredded
    1/2 c Mojo Broth (my recipe)
    1-1/2 tsp cumin powder


Combine all but cheese in a pot. Bring to a boil, reduce heat and simmer for 15 to 20 minutes until liquid is absorbed. Turn off heat, add cheese, and stir to melt.
