Hoppin John (from Parade mag. Katie Lee) Low Sodium Version

Number of Servings: 6

Ingredients

    1 Tbsp Olive Oil
    1 Med. Onion, diced
    1 Red Bell Pepper, diced
    2 Garlic cloves, minced
    2 15 oz. cans blackeyed peas rinsed and drained
    or 1 pkg. dry black eyed peas soaked and precooked
    1/4 cup Vegetable broth or water
    1/2 tsp. Ground Black Pepper
    2 Green Onions, thinly sliced
    1/4 cup Flat Leafed Parsley, minced

Directions

Heat olive oil in lge saucepan over med. heat Add onions red bell pepper and garlic. Saute until onions are translucent (approx. 5 min.)
Stir in precooked black eyed peas, water pepper. Reduce heat to low cook 10 min. Stir in green onions and parsley.
Serve on top of brown rice and garnish with cheese. Add hot sauce if desired
