Easy Homemade Tomato Soup

You can make this in the time it takes you to open a can!

Number of Servings: 6

Ingredients

    2 TB flour
    2 TB olive oil
    4 cups V8 or tomato juice
    2 cups skim milk
    salt and pepper to taste
    1/4 tsp to 1/ tsp Onion powder optional

Directions

makes 6 1 cup servings
Create a roux by mixing flour and oil over medium heat in a saucepan.
Slowly pour in juice once roux is lightly browned. Add salt, pepper and onion powder.
Bring to just below a boil. Turn off heat. Add in milk and serve.
