Pepperoni Pizza Bread

Introduction

This is a quick substitute for ordinary pizza that does not require having to make the dough. This is a quick substitute for ordinary pizza that does not require having to make the dough.

Ingredients

    1 loaf Italian bread, sliced lengthwise with bread scooped out of the middle.
    8 oz. Mozzarella cheese, grated
    4 oz. Colby-jack cheese, grated
    2 1/2 cups pizza sauce (recipe follows) or 1 large can of prepared pizza sauce.
    1 package pepperoni (may use turkey pepperoni for even fewer calories).

    Sauce:
    2 tsp olive oil
    1 red onion, diced
    2 cloves garlic, minced
    1 can (15 oz) tomato sauce
    1 can (14 1/2 oz) stewed tomatoes
    1 tsp salt
    1/2 tsp black pepper
    1/2 tsp italian seasoning
    1 tsp dried oregano

Directions

Preheat oven to 425 degrees.

Place bread flat on cookie sheet. Use half of the sauce for each side. Place pepperoni evenly over each half. Combine mozzarella and colby-jack cheese, sprinkle over pepperoni slices and to the edge of the bread. Do not overlapp. Sprinkle with parmesan cheese. Bake for 20-25 minutes or until cheese is melted and golden brown.

For homemade sauce:
Preheat saucepan over medium heat, add oil. Add onion and garlic. Sautee until onion becomes transparent. Add tomato sauce and stewed tomatoes. Bring to slow boil. Add salt, pepper, italian seasoning and oregano. Bring to boil again. Lower heat and cover. Cook for 1 hour on low.
