Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions (Allrecipes, modified)

    1/2 lb raw sweet potato, peeled and cut into 1-inch chunks
    1/2 lb baby carrots, cut in half lengthwise
    1/2 large onion (apx 150 g)
    1-1/2 slices Oscar Mayer center cut bacon, diced
    2 T Aunt Jemima Lite Syrup
    1 tsp olive oil
    3/4 tsp fresh thyme


Preheat oven to 425F.

Combine sweet potato and carrots with olive oil. Spread out on a nonstick baking sheet or spray with Pam. Bake for about 40 minutes or until vegetables are tender.

Cook bacon in a nonstick skillet. Remove and let cool.

Cut onion in half and cut one half into 1/4" slices. Add to same pan and cook over low heat for about 20 minutes until browned and caramelized. Deglaze the pan with about a tablespoon of water or veggie stock. Set onions aside with bacon.

Add maple syrup and thyme to the pan and then add potatoes, carrots, onions, and bacon and stir until thickened and glazed. Serve.

Serving = apx 100 g
