Introduction

Traditional Swedish pastry served during Lent. Traditional Swedish pastry served during Lent.
Number of Servings: 14

Ingredients

    Butter, unsalted, 100 grams (remove)
    Milk, 1%, 300 mL (remove)
    Yeast, bakers, .75 ounce (remove)
    Granulated Sugar, .5 cup (remove)
    Salt, 1 dash (remove)
    *Flour, white, 4.5 cup (remove)
    Egg, fresh, 1 large (remove)
    Almonds, 1.75 cup, ground (remove)
    Granulated Sugar, 1.75 cup (remove)
    Heavy Whipping Cream, 1 cup, whipped (remove)
    Baking Soda, .5 tsp (remove)
    Baking Powder, .5 tsp (remove)
    Cardamom, ground, 1 tbsp (remove)

Directions

Melt butter and heat milk together until lukewarm. Dissolve in yeast. Add half cup sugar, salt, baking powder and soda, cardamom, egg, and flour. Beat until shiny. Allow to rise in a warm place for 30 minutes.

Shape into 14 buns. Place on lined baking sheet. Allow to rise 30 min. Bake 8-10 min at 450 F. Allow buns to cool.

Slice buns halfway and pull out cavern in center.

Blend removed bun crumbs, almonds, remaining sugar, and a splash of milk until smooth. Fill inside bun. Add dollop of whipped cream and place "cap" of bun on top.

Decorate with dusting of powdered sugar, if you please.
