Introduction

This is a tasty and filling breakfast. If you have leftover grilled vegetables from the night before they taste great in this recipe. This is a tasty and filling breakfast. If you have leftover grilled vegetables from the night before they taste great in this recipe.

Ingredients

    2C. summer squash, chopped in chunks
    1/2 c. mushroom slices
    3 cloves garlic , pressed
    1 tbsp. olive oil
    2 large eggs
    1/4 c. parmesan cheese
    Mrs. Dash garlic and herb seasoning blend
    1 c. chopped onions
    1/2 cup sundried tomatoes

Directions

In pan add oil and sautee, squash,mushrooms,onion, garlic, till tender. Add sundried tomatoes last few minutes of cooking. Poach eggs. Divide vegtables between 2 plates. Sprinkle with cheese. Put poached egg over each plate of sauteed vegetables. Enjoy
