Egg White Fritatta

Ingredients

    Egg Whites
    Canadian Bacon (1 slice)
    Fresh Tomatoes (1/4 med.)
    Fresh Basil
    1 oz.. Low Fat Cheese (optional)
    Pam
    Salt and Pepper to taste

Directions

Spray nonstick pan with pam. When hot add 1 slice of canadian bacon cut into small pieces. When bacon has browned add egg whites (you can either separate eggs or use whites from the carton). When whites start to become cloudy add freshly diced tomatoes and freshly chopped basil spread evenly over eggs. If you like you can also sprinkle your favorite low fat cheese (1 oz.) and salt and pepper to taste. Let eggs cook thorougly and slide out onto plate open faced.
Note- you can also add any vegetables you may have left over from your fridge to change the fritatta to suit your taste.
