Introduction

Ingredients

    1 Whole Wheat Bagel
    2 eggs
    Laughing Cow Light Creamy Swiss Original Cheese - 1 wedge
    1 cup, pieces or slices Mushrooms
    1 cup fresh Spinach - chopped
    2 slices Turkey Ham - diced
    .25 cup skim milk

    Salsa - optional

    Olive Oil Cooking Spray

Directions

Beat eggs, and milk together is small bowl, set aside.

Slice bagel and scoop out a channel around bagel.

Saute mushrooms, and spinach in fry pan with olive oil cooking spray, until mushrooms have browned and reduced in size, and spinach has wilted. Add ham and continue cooking until ham is slightly browned. Add beaten egg, and milk. Stir and cook until egg is set.

Toast hollowed out bagel halves

Break wedge of cheese into pieces and divide between bagel halves, lightly spread cheese. Divide egg mixture and spoon unto bagel halves.

Alternative preparation/presentation:
Scoop out bagels, spoon on egg mixture, divide cheese and place on top, and warm in toaster oven.

Can be topped with salsa. (not calculated in nutritional information)
