Shady Farms Turkey Cashew Stir Fry

Introduction

Ingredients

    3 tbs peanut oil
    1 tbs soy sauce
    1 tsp corn starch
    1/4 tsp red pepper flakes
    1 egg white
    1 lb turkey cutlets cut into 1/4 inch strips
    4 oz snowpeas, trimmed
    1 red bell pepper cut into 1/4 inch strips
    4 oz cashews
    1 tbs fresh minced ginger
    1 garlic clove, minced
    1 can (15 oz) baby corn, rinsed & drained
    1 can (15oz) straw mushrooms rinse & drained


Directions

Beat 1 tbs oil, soy sauce, corn starch, pepper flakes and egg white in a large bowl.

Put turkey in this marinade for at least 30 minutes, covered.

Heat 1 tbs of oil in a large skillet or wok over medium heat. Add snow peas, red bell pepper strips and stirfry for 2 minutes; transfer to bowl.

Add last tbs of oil and cashews to stirfry for 1 minute- transfer to same bowl (as veggies). Add turkey, marinade, ginger, garlic and stirfry for 3 minutes. Add corn, mushrooms, reserved veggies and nuts and stirfry another 2 minute more until all is hot.
