Chicken Cordon Bleu

Introduction

Number of Servings: 2

Ingredients

    2 large (6 oz each) Gold n Plump Boneless Skinless Split Chicken Breasts
    1 cup sliced Fresh Mushrooms
    4 slices Hormel Natural Choice Cooked Deli Ham
    2 slices Sargento Reduced Fat Swiss Cheese
    1/4 tsp Mrs. Dash Chicken Grilling Blend Seasoning (or more to taste)
    Optional: Breadcrumbs (not in nutritional info)

Tips

You can cover these with a coating of breadcrumbs before baking if you want to have more of a crispy/crunchy version. I've found that they are plenty tasty and juicy without using breadcrumbs, though!


Directions

Preheat oven to 375d
Spray a deep baking dish with nonstick spray
Place chicken breasts between 2 sheets of waxed paper and pound to about 1/4" thickness
Sprinkle chicken with Mrs. Dash seasoning
Place 2 slices of ham, 1/2 cup mushrooms and 1/2 slice of cheese on each breast
Roll up tightly and secure with toothpicks.
(Note: If you're using breadcrumbs, roll the chicken pieces in them at this point).
Place chicken in baking dish.
Cover dish with foil and bake for 20 minutes.
Remove foil and bake for 20 more minutes
Remove toothpicks, then top with remaining half slices of cheese, and bake for 2-3 more minutes or until cheese melts and chicken is cooked through.
