1 egg 1 egg white 1 tsp skim milk 1 tsp light olive oil 1/2 cup chopped brocolli, fresh or frozen 1 tsp minced garlic 2 tbls. low fat mozarella cheese 1 tsp chrushed red pepper flakes (optional) pepper to taste
beat egg, egg white & skim milk, set aside. heat olive oil and add brocolli & garlic, saute until tender, about 5 minutes. add egg mixture and cook until almost done, letting pooled eggs rotate to sides of pan, sprinkle with crushed red pepper flakes and pepper, cook one minute more add cheese and fold omelet over. reduce heat to simmer and cover til cheese is melted. makes 1 omelet.
