2 Egg Whites
Grated Parmesean Cheese (about 1/4 cup)
1/4 cup grated Cheddar Cheese (the sharper, the better)
1/4 cup sweet red peppers
1/4 cup green bell peppers
1/4 cup Spinach
1/4 teaspoon Garlic Salt
1/4 teaspoon Ground Pepper
Add the ground pepper and garlic salt. Stir again.
Coat a small skillet with nonstick cooking spray, and set to medium heat.
Pour egg mixture into skillet, making sure to spread out so mixture covers the bottom of the skillet. Once bubbles on the edge pop and set (don't get filled in) use your spatula to fold the omelette in half. Allow it to set for another minute. Flip until both sides are the desired color (I like when it has spots of light brown).
Then plate, and serve.
