Number of Servings: 4

Ingredients

    12 oz fresh or frozen shelled shrimp
    1 c chopped onion
    2 tbs margarine
    1 tbs olive oil
    1 cup dry white wine
    1 tsp dried basil crushed
    1 cup crushed tomatoes
    10 oz of cooked pasta
    1/2 c grated parmesan cheese
    1/2 cup snipped parsely
    1/2 tsp salt
    1/8 tsp black pepper

Directions

Thaw Shrimp

In sauce pan cook onion in 2 tbs of margarine and the olive oil until tender but not brown. Stir in wine and basil, 1/2 tsp salt and 1/8 tsp pepper. Bring to a boil.

Reduce the heat, boil gently uncovered for 12-15 minutes or until 2/3 of liquid is evaporated. Halve shrimp length wise; add to wine mixture and simmer for 5 minutes, stir in crushed tomatoes and heat through.

Toss pasta with shrimp mixture, cheese and parsely, toss until pasta is coated.
