1 1/2 pounds of ground turkey (93% lean)
1 1/2 tsp red curry paste
1 tsp cumin
4 cups low sodium chicken broth
1/4 cup oat bran
1/4 cup quinoa
2 cups chopped raw sweet potato
1 large green pepper chopped fine
1/2 cup unsweetened coconut milk
1/3 cup unsweetened coconut
2 cups tomato puree
Plan to add an additional 1/2 T of red curry paste to your own serving if you like it more flavorful as I do, it is NOT spicy hot as well as an extra sprinkle of cumin into your bowl.
