Quick EB Casserole

Introduction

This casserole can be made ahead of time! This casserole can be made ahead of time!

Ingredients

    12 Eggland's Best Large Eggs
    4 Hawaiian Bread Rolls
    1/2 cup of Skim Milk
    1 Cup Low Fat Cheddar Cheese
    4 Slices of Louis Rich Turkey Bacon, cooked.
    1/2 tbsp of salt and pepper
    1 tsp of powdered mustard
    1 or 2 sprays of cooking spray

Directions

Preheat the over to 350 degrees.

This recipe will make about ten 2 inch portions.

1. In a mixing bowl, break a dozen Eggland's Best Large eggs and 1/2 cup of skim milk. Then, beat them using a whisk.

2. Get out a 2.5 quart casserole dish and use the cooking spray to lightly coat the inside.

3. Tear apart 4 Hawaiian rolls and put into the casserole dish.

4. Crumble up 4 pieces of cooked turkey bacon and spread that into the casserole dish on top of the rolls.

5. Spread half of the shredded low fat cheddar cheese over that.

6. Sprinkle the salt, pepper and dry mustard evenly over the top of the rolls.

7. Add the milk and Eggland's Best egg mixture to the casserole dish.

8. Use a spoon to make sure the mixture gets into the casserole dish evenly covering the rolls, bacon and cheese.

9. Top the casserole evenly with last half of the shredded cheddar cheese.

10. Cook the casserole in the preheated oven at 350 degrees for about 45 minutes.

You can serve this casserole right out of the oven or allow it to set a bit by waiting 10 minutes after getting it out of the oven. If the egg mixture is not firm, allow for more time in the oven.
