Cauliflower Soup

Introduction

A hearty soup for the winter. Serve as an entire meal with rolls or crackers. A hearty soup for the winter. Serve as an entire meal with rolls or crackers.
Number of Servings: 6

Ingredients

    2 tbsp maragrine
    1 cup diced onions
    3 cups cauliflower
    2 cups chicken or veggie broth
    2 cups skim milk
    1 cup shredded cheddar cheese
    1/4 cup white flour

Directions

Makes 6- 1- 11/2 cup portions.
1. Melt margarine in a large stock pot and sautee onions.
2. Add in cauliflower and stock and bring to a boil, then simmer for 10-15 minutes (until caulifower is tender).
3. Create a rue with the milk and flour. Add to pot.
4. Let simmer for 5 minutes.
5. Add in 3/4 cup of cheese and let melt.
6. Serve and top bowls with the remaining cheese.
