Breakfast Sandwich

Introduction

I love the fast food breakfast sandwiches. I have created my own, much lower fat, healthier version. Very easy, but very yummy! I love the fast food breakfast sandwiches. I have created my own, much lower fat, healthier version. Very easy, but very yummy!
Number of Servings: 1

Ingredients

    1 English Muffin
    1 egg
    1 low fat cheese slice
    1 Morningstar Farm Breakfast patty or other tofu sausage patty

Directions

Toast English Muffin. While waiting, spray small frying pan with oil. Break egg and cook to desired consistency (over easy, hard, etc). Heat breakfast patty in microwave according to package instructions. Place slice of cheese on half of toasted muffin, add sausage patty, egg, and other half of muffin. Enjoy!

Many variations are available; use sandwich thins or bagel thins in place of English Muffin; use turkey bacon or Canadian bacon in place of tofu sausage. Scramble the egg and make a small omelette or poach the egg.
