IntroductionI found this recipe which originally called for two cans of beans. Since I don't eat beans, I subbed the two cans of Rotel. I found this recipe which originally called for two cans of beans. Since I don't eat beans, I subbed the two cans of Rotel.
2.5 lbs. lean stew meat
1 cup onion, chopped
2 (15 ounce) cans chili-ready diced tomatoes
2 (10 ounce) cans Rotel Tomatoes Original Diced Tomatoes & Green Chilies
2 Tbsp. chili powder
1 1/2 tsp. ground oregano
1 1/2 tsp. ground cumin
Cheddar cheese, optional
2. Put meat, onions, spices, and tomatoes into crockpot.
3. Cook on low for six to seven hours.
Serves 4-6 bowls of chili. Add cheddar cheese if you wish; I did not calculate the recipe with cheese as a topping.
