Introduction

A fabulous fall snack. You get a generous pice of cake with an underlying hint of caramel flavor.

Number of Servings: 24

Ingredients

    1/2 cup butter, softened
    1 1/2 cups packed lt. brown sugar
    3 large eggs, beaten
    w cups canned pumpkin
    1/4 tsp pumpkin pie spice
    1 1/2 cups all-purposed flour
    1 1/2 cups uncooked quick oats
    1 1/2 tsp baking soda

Directions

Preheat oven to 350F. Coat a 10x15in baking dish wiht cooking spray.
Using an electric mixer, in a large bowl, cream butter and sugar until light and fluffy. Add eggs and pumpkin; beat well. Add salt, pumpkin pie spice, flour, oats, and baking soda; mix thoroughly.
Pour batter into prepared baking dish. Bake until a toothpick inserted in center of cake comes out clean, about 40-45 minutes.
Cool in pan and cut into 24 pieces. Yields piece per serving; 24 servings.
