Introduction

The mix of red and green peppers makes this a colorful Christmas looking egg casserole. Easy and low-calories. The mix of red and green peppers makes this a colorful Christmas looking egg casserole. Easy and low-calories.
Number of Servings: 10

Ingredients

    6 slices bacon, cooked, crumbled
    5 oz. turkey sausage
    1 C each diced red and green peppers
    1 C chopped onion
    10 slices homemade wheat bread
    10 eggs
    1/2 C shredded cheddar cheese

Directions

1) Spray grease 13 X 9 pan. Place slices of bread in bottom of pan.
2) Melt coconut oil in large skillet. Saute peppers and onions in oil. Sprinkle over bread slices.
3) Cook turkey sausage in large skillet, breaking into small pieces as it cooks. Sprinkle over peppers and onions. Sprinkle crumbled bacon on top.
4) In medium bowl, whisk eggs until fluffy. Add cheese and mix. Pour egg mixture over veggies and meat.
5) Set in refrigerator 8 hours or overnight.
6) Place dish in cold oven. Turn oven to 350 and bake 35-45 minutes.
7) Let set for about 5 minutes. Cut into 10 servings and enjoy!
