Easy Pancakes

Ingredients

    2 cups all-purpose flour
    1/4 cup sugar
    2 Tbsp baking powder
    1 tsp salt
    2 large eggs, beaten
    2 cups milk, nonfat
    1/4 cup canola oil

Directions

1. In a large bowl, mix flour, sugar, baking powder, and salt. Make a well in the center, and pour in milk, egg, and oil. Mix until smooth.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Makes 16 pancakes - 1 pancake per serving
