Mexican Cornbread

Introduction

I make this to go with the Hoppin John that I make New Years Day. I use egg whites because of cholesterol. I make this to go with the Hoppin John that I make New Years Day. I use egg whites because of cholesterol.
Number of Servings: 12

Ingredients

    .25 cup oil
    1 cup cornmeal
    1 cup whole wheat flour
    1 tablespoon sweetner
    8 ounces kernel corn
    0.5 cup shredded cheese
    1 tablespoon baking powder
    0.5 teaspoon salt
    1 cup non-fat milk
    3 egg whites
    4 oz. can green chilies

Directions

Preheat oven 425. Combine dry ingredients. Add milk,egg whites,chilies,cheese and corn, Mix well. Add oil and mix.
Spray muffin tin amd fill cups 2/3 full and bake 25-30 minutes. Makes 12- 1 servings.
