Lentil Stew (south beach #1)

Introduction

phase one south beach friendly phase one south beach friendly
Number of Servings: 6

Ingredients

    2 C dry lentils
    2T olive oil
    1 med onion
    3 stalks celery
    2 x 14.5 oz cans fire roasted tomatoes
    4C vegetable broth
    1/4 t tumeric and cumin (I added more cumin)
    1t chili powder (I also added some garlic salt)
    10-15 drops hot sauce
    optional garnish--lime and cilantro

Directions

bring lentils to boil in 4 C water. turn off, steep for ~20 min
dice onion and cook in oil (dp in soup pot...)
chop celery and add, cook until soft
Add tomatoes, broth, and spices...cook until hot
add lentils/remaining water to soup stuff
I cooked on low heat for maybe 30' to get flavor into lentils
garnish if desired with lime and cilantro
