Curried lentils with fruit

Number of Servings: 5


    2 cups vergetable or chcken stock
    1 cup dry lentils
    2 stalks celery with leafy tops, diced
    1 med. grated carrot
    1/2 tsp curry powder
    1/2 tsp. onion powder or 2-3 TB. minced onion
    1/2 tsp. salt or salt sub. (optional)

    1/4 cup dried currants, cranberries, raisons, or others
    1 tart apple, peeled and diced
    1/2 to 2 tsp minced ginger.


In a medium no-stick saucepan, combine the stock, lentils, celery, carrot, onion,curry powder and salt. Bring to a boil over med. high heat. Reduce the heat to med. low, cover, and cook or 30 minutes, or until the lentils are soft but not mushy.
Add the apples, dried fruit, and ginger. Season to taste with salt (if using). Cook an additional 5 minutes

5 1/2 cup servings
