Cheese & Sausage Breakfast Muffins

Introduction

Cheese muffins -- similar to Red Lobster's -- with browned sausage added. Make ahead of time, store in refrig and reheat in microwave during the week. Ingredients

    1/2 pound Jimmy Dean regular sausage browned and drained must be Jimmy Dean!
    1 1/2 cups flour
    1 1/2 tablespoons sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    3 cups shredded Colby-jack cheese
    1 cup milk
    1 egg
    1/4 cup (1/2 stick) melted butter (I used salted)

Directions

Whisk together dry ingredients, and then stir in cheese.
In a separate bowl, whisk egg, milk, and butter together. Pour milk mixture into dry ingredients and stir with a spoon to combine. Add sausage.
Bake in paper-lined muffin tins at 375 degrees for 20-25 minutes.
I either double this recipe so I can use a whole pound of sausage since it comes in a pound package, or freeze the other half pound for future use.
