Beef and Cheese Enchiladas

Introduction

I used a version of the Reduced Fat Enchilada Recipe provided by user MOOMAMA1 and modified with additional ingredients. I used a version of the Reduced Fat Enchilada Recipe provided by user MOOMAMA1 and modified with additional ingredients.

Ingredients

    8 oz. 1/3 Less Fat Neufchatel Cream Cheese, room temperature
    16 oz Refried Beans
    1 cup Salsa
    1 cup Mozzarella Fat Free Shredded Cheese
    1 lb 93% Lean Ground Beef, cooked
    23 Corn Tortilla
    10 oz Enchilada Sauce

Directions

In a bowl cream the Cream Cheese until soft. Add the can of refried beans to cream cheese and allow to beat together. Then add salsa to mixture, allowing to mix together. Add mozzarella cheese to mixture allowing to mix, then add cooked ground beef to mixture. Once entire mixture is completely combined together, prepare to fill tortillas.

Use a large baking dish & spray with cooking spray. On each tortilla place about a generous tablespoon of mixture and roll tortilla up, then place it in the baking dish seam side down. Do this for however many tortilla shells it takes, but should be 22 or 23. (I actually had to use 2 baking dishes to have room for all of them). Open can of enchilada sauce and spread over all of the filled tortillas.

Bake at 375 degrees for 20 to 25 minutes. A serving is 2 enchilada rolls. You can also top with lettuce and/or sour cream when finished but that's not figured into nutritional value.
