Italian Sausage Soup

Ingredients

    Olive Oil, 1 tbsp
    Mushrooms, fresh, 227 grams
    Onions, raw, 1 medium (2-1/2" dia)
    Carrots, raw, 1 medium
    Garlic, 2 cloves
    *Jennie O Hot Italian Turkey Sausage, 16 oz.
    Broth, chicken: Kitchen Basics, Unsalted Chicken Cooking Stock, 1 cup(240 ml)/serv, 4 serving
    Diced Tomatoes - No Salt Added - 1 can, 14.5 oz
    Del Monte tomato sauce, no salt added, 8 oz
    Zucchini, 350 grams
    *Raw Yellow Squash, 1 cup
    Green Beans (snap), 113 grams
    Borbello's Cheese Tortellini, 4 oz
    *Cheese - Parmesan Grated Cheese, 6 tsp
    Pepper, black, .5 tsp
    Basil, 3 tbsp


Directions

Heat oil in a large nonstick saucepan over medium-high heat. Add the mushrooms, onion, carrot, and garlic. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes. Add the sausage and cook, breaking up the sausage with a wooden spoon, until browned, about 8 minutes. Add the broth, tomatoes, and tomato sauce; bring to a boil. Reduce the heat and simmer, covered, until the flavors are blended, about 10 minutes.
Stir in the zuchinni, yellow squash, green beans, and tortellini; return to a boil, stirring occasionally. Reduce the heat and simmer, covered, until the vegetables and tortellini are tender, about 8 minutes. Remove from the heat; stir in the basil, parmesan cheese, and pepper. Yields generous 1 1/2 cups per serving.
