Introduction

Number of Servings: 6

Ingredients

    2 tbs olive oil
    1 large onion, finely chopped
    2 cups mashed, cooked beans (pinto, pea, kidney, mixed)
    1 cup finely chopped nuts (walnuts, pecans, cashews)
    2 cups whole wheat bread crumbs
    2 eggs, lightly beaten
    1 1/4 cup 1% milk
    1 tsp dried sage
    1/2 tsp salt
    1/4 tsp ground pepper
    1/4 cup chopped parsley
    1/3 cup chopped celery
    Barbeque sauce, optional topping

Directions

Heat oil in skillet & saute onion & celery until tender but not browned. Combine with remaining ingredients except BBQ sauce. Pack into lightly oiled loaf pan and bake in 350* oven for 45 minutes. Let cool slightly, slice, and serve with BBQ sauce.
