Ingredients

1-1/2 large raw onion, chopped
2 garlic cloves, crushed
1 cup tomato sauce
1 cup ff chicken broth
1 tbsp. Heinz apple cider vinegar
1-1/2 cup light red (or dark) red kidney beans (or cannellini white beans if handy)
1 medium green pepper
1/4 cup scallions (optional)
2 tbsp. chili powder
1 tbsp. paprika
1-1/2 tsp. crushed red pepper flakes
1 tsp. ground cumin seed
1/2 tbsp. table salt
1/8 tsp. ground black pepper
1-1/2 cup medium carrots,sliced
2 medium size tomatoes, chopped small
1# lean ground turkey breast
Pam cooking spray
2 tsp. e.v. olive oil (or more)
Directions
Coat a large pot w/cooking spray and oil of needed. Place over medium heat. Add oil, onion and saute until soft, about 7 minutes. Add garlic, diced/sliced carrots, cook until garlic is soft. Add turkey, brown meat; cook about 5 minutes, breaking it up with a wooden spoon as it cooks. Add chili powder, paprika, red pepper flakes, cumin, fresh tomatoes, diced, tomato sauce, broth, vinegar and drained and rinsed beans, and diced green pepper; Bring to a boil. Cover, reduce heat and simmer until meat and vegetables are tender, about 45 minutes. Season to taste with s+p, garnish w/scallions if desired.
