Introduction

Quick fix Broccoli Cheese Soup. Makes 2 1.5 cup servings. A little high on the calories....but this soup is hearty enough to make a meal. Quick fix Broccoli Cheese Soup. Makes 2 1.5 cup servings. A little high on the calories....but this soup is hearty enough to make a meal.
Number of Servings: 2

Ingredients

    1 cup skim organic milk
    1.5 cups chopped cooked broccoli
    1 can Swanson's veggie broth
    1 tbsp butter
    2 ozs. Dubliner's Irish Cheddar
    2 tsp parmesan cheese
    2 Tablespoons Whole Wheat Pastry Flour
    1 tsp dried mustard
    Salt to taste

Directions

Warm broth with milk, mustard, salt. In a separate pan make a roux of butter and flour. You can add a little Knox Veggie Bouillon (the kind that is in a plastic container and refridgerated) if you want to take the taste up a notch or two. Add roux to the broth. Add cheeses, slowly bring to a boil. Add broccoli (I warm mine in the microwave first). Heat until thickened and ready.
