Introduction

Super easy and Vegan. The coconut oil used is actually a very healthy oil to use and studies suggest that it may actually boost metabolism. Super easy and Vegan. The coconut oil used is actually a very healthy oil to use and studies suggest that it may actually boost metabolism.
Number of Servings: 4

Ingredients

    1 can Lite Coconut Milk
    1 can pumpkin puree
    1 can vegetable broth
    1 tsp coconut oil
    1/2 tsp. curry powder
    1/2 tsp ground cumin
    1/2 tsp. ground ginger
    1/4 tsp salt or salt substitute
    1 packet of truvia

Directions

Finely chop onion
saute in coconut oil for 5 minutes and low/medium heat
add all other ingredients. Bring to just barely a boil and simmer for at least 15 minutes.
Serve.

  • I added potatoes (4 pounds) that I cut into cubes and browned and cooked for 5-8 min. I also added garlic and lemon balm, cooked curried chicken (2 pounds). Let it all simmer for 20-30 min. Was very good. - 10/13/10
