1 Large Cucumber - peeled and sliced; seeds removed
1 teaspoon of salt
2 Tablespoons of Cider Vinegar
1 Tablespoon of Truvia or Stevia
1 Tsp. of Soy Sauce or Bragg's Amino Acids
Scoop seeds out with a spoon and then slice each half using a mandoline or knife
Sprinkle sliced cucumber with salt and let stand for 5 minutes
Squeeze out excess moisture.
Combine vinegar, sugar and soy in bowl and mix well.
Pour Vinegar mixture over the cucumber slices and toss.
