Coconut Rice

    1 cup white or basmati rice
    1 cups water
    1 cup coconut milk
    1/2 large sweet onion
    2 tablespoons olive oil


Heat olive oil in a heavy bottom pot. Add onions when hot and sautee until translucent. Add rice and saute for a couple minutes.

Add the water and coconut milk. Bring to a rapid boil, then cover and reduce heat to low/medium-low. Simmer for 20 minutes. Season to taste.
