Slow cooker Pork Enchilada filling

Ingredients

    2 lbs Pork tenderloin or roast
    1 28 oz can crushed tomatoes
    1 small can chopped green chillies
    1 packet taco seasoning
    1 small onion
    chopped cilantro (optional)

Directions

Place pork in crock pot use taco seasoning as a rub on both sides. Place can of tomatoes and green chillies in crock pot. Cover and cook on low for 6-8 hours.

When pork is done remove from crock pot and shred with two forks. Add some of the juice (1/2-1 C) to the pork for moisture. Meanwhile saute onion with olive oil spray chop some cilantro and add cooked onions and cilantro to the mixture.

Pork mixture can be used in any dish (tacos, burritos, taco salad, enchiladas.

If making enchiladas: Soak flour tortillas in remaining sauce, fill with mixture, roll, place in pan, cover with remaining sauce and cheese. Bake 350 for 20 minutes covered with foil and 10 minutes without foil...yum~!
