1 lg can whole tomatos
6- 8 oz tomato paste
1 can red kidney beans (rinsed)
1 medium onion (diced)
1 lb ground turkey breast
1 packet chili seasoning (any brand)
1-2 Tbsp Olive oil
Tomato juice for thinning (I use V8 low sodium)
Other seasoning to taste (cilantro, cumin, cayenne pepper, salt, pepper etc...)
When turkey is browned, add tomato paste and packet of spices.
Add turkey mixture to onion/tomato mixture.
Simmer to melde flavors. Add additional spices to taste. If chili becomes too thick or you would like to stretch a little farther, add tomato juice to thin without diluting taste.
