Introduction

Number of Servings: 4

Ingredients

    1 1/2 lbs Cod fillets
    1 1/2 Tbsp extra virgin olive oil
    1 Tbsp dried Basil
    10 oz marinated artichoke hearts (about 12), plus 1 Tbsp liquid from jar (I used Member's Mark whole artichoke hearts in nutrition calculation)
    salt and freshly ground black pepper to taste

Directions

Heat oven to 450 degrees.

Place cod in an ovenproof baking dish, brush with oil, sprinkle with basil, and season with salt & pepper. Arrange artichoke hearts around fish and drizzle with artichoke liquid.

Bake until fish is opaque and just flakes with a fork, 12 to 14 minutes. Remove from oven and serve hot.
