Introduction

I was looking in my cupboards for something quick an dsimple and came up with this. Can be modified in anyway. The Betty Crocker cornbread topping is calculated as prepared with a serving size of 3 tbs. I was looking in my cupboards for something quick an dsimple and came up with this. Ingredients

    5 cups Bybee's Organic mixed vegetables
    2 14oz Cambell's Cream of Chicken soup
    1 lbs Boneless, skinless Chicken Breast, cubed
    1 Betty Crocker Cornbread & Muffin mix

Directions

Preheat oven to 400*. Spray 2 qt baking dish, set aside. Cube chicken breast, brown in pan sprayed with Pam on medium heat until cooked through. Mix Cream of Chicken in pan with chicken, warm soup mixture. As mix is warming, mix corn bread topping according to package directions. Add frozen veggies to baking pan, pour soup and chicken on top, mix. Pour cornbread mix over rest and gently spread until chicken & veg mixture is covered as much as you can. Bake at 400* for 16-18 minutes uncovered. Serving size is 1 cup.
