Low Fat Banana Bread

Number of Servings: 30

Ingredients

    2/3 cup sugar
    1/4 cup butter or margarine (softened)
    2 eggs
    1 cup mashed bananas (approx. 2 medium)
    1/4 cup water
    1 + 2/3 cup flour
    1 tsp baking soda
    1/2 tsp salt
    1/4 tsp baking powder
    (optional) mini chocolate chips
    (optional) nuts

Directions

If cut loaf in half lengthwise, can make 28-30 half slices.

Preheat oven to 350 degrees. Spray loaf pan with cooking spray.

In medium bowl, beat sugar and butter or margarine until smooth. Beat in eggs, water, and bananas with the sugar mixture.

Mix in flour, baking soda, salt, and baking powder just until mixture is moist.

Bake at 350 degrees for about 1 hour. Top of bread should be a rich golden brown. Insert toothpick near center to test. Toothpick should come out clean when bread is fully baked.
