Breakfast Tacos

Introduction

Number of Servings: 2

Ingredients

    2 taco size flour tortillas
    2/3c potato shreds
    1/2tbsp chopped onions
    1slice deli ham
    1/8 c mild cheddar cheese
    1 large egg
    1/2tbsp sour cream
    1 tbsp salsa
    Cooking spray

Directions

Spray a pan with cooking spray. Add potatoes and onions. Cook until potatoes are done. Tear up slice of ham and add to mixture. Allow this to warm. Scramble the egg and add that to the pan. Toss until egg is scrambled. Pile ingredients together and top with cheese. Allow cheese to melt.
Warm tortilla in microwave. Place half of the mixture in pan into tortilla. Add 1/2 of the sour cream and 1/2 of salsa on top of taco, save remaining for the 2nd taco. Fold and enjoy!
