Introduction

Three ingredients, 10 minutes and dinner is ready! Three ingredients, 10 minutes and dinner is ready!
Number of Servings: 6

Ingredients

    2 cans black beans, rinsed & drained
    2 cups chicken broth
    1 cup salsa

Tips

Change up the flavor by using different flavors of salsa.


Directions

Heat all ingredients in large pot on stove until heated through.
Transfer to a blender or use an immersion blender to puree into a "creamy" black bean soup.
Garnish with fresh cilantro or other herbs.

    This is a good basic recipe. I like to add other things to spice it up and give it more of a healthy punch. I saute up about 1/2 c. each of onion, celery and carrots in a bit of butter. Then I add 1 tbsp of cumin. I blend it & add another can of beans to give it a few chunks. Serve w/ sour cream. - 2/2/11

    This soup is awesome! I added a tsp. of cumin and it was delicious creamy goodness! I added fresh cilantro and fat free sour cream as toppings.I will be making this soup at least once a week. - 1/1/12

    Loved it! I made it with dry black beans, and it took 30 minutes to cook them in pressure cooker (I used about 1.5 cups dry beans + 4 cups water + 1 chicken bouillon cube). After the beans were cooked, I added some chili pepper paste, the salsa and 2 cloves of garlic, then puréed in Cuisinart. YUM! - 9/1/10

    Swapped vegetable broth for chicken broth to align with my vegan life style. I'm a garlic lover so I added about a teaspoon of minced garlic and two tsp cumin. So good, and so quick to make. - 3/11/12

    Awesome, used low sodium chicken broth which cut the sodium drastically. Topped with 2% Greek yogurt instead of sour cream and you wouldn't know the difference. Husband loved it and he is picky. Will keep it on the dinner rotation for sure. - 9/23/11

    Great recipe! I adapted the recipe: I added about a cup cut bell pepper and half the beans to the pot. I let the pot simmer for about 10 minutes then I pureed the mix in a blender, leaving it slightly chunky. I put the mix and rest of the beans into the pot to simmer 10 more minutes. Yum! - 9/9/12

    Absolutetly fabulous. The cilantro is the key. A small dollop of PLAIN fat free greek yogurt gives a tang like sour cream but without all the calories. - 12/28/12

    Make sure you check the nutrition information...different brands have a different amount of calories per serving of broth, beans, or salsa. I'd suggest doing a recipe makeover to check your ingredients. - 12/29/12

    This is one of my favorites!! I add corn, red onion, and green pepper and it just adds a bit more to it.

    I make this all the time..I do use fat free chicken broth to cut the calories, I also add fat free refried beans to it to thicken it...we LOVE it!@ - 9/30/08

  • There's nothing better in the world than a flexible, healthy five-minute recipe. I added onion, cajun seasoning and cumin and served it with a bit of sour cream on top. If you make the beans from dried instead of using canned, you save a ton of sodium ( and can then justify using bouillon cubes) - 2/1/14

  • I made this tonight after seeing it featured on SP. All I can say is WOW! It was delicious as is. My toppings were 2 tbsp of 0% Greek Yogurt and I added 2 ounces of shredded poached chicken. Next time I might add brown rice with chicken and a little cheese, call it burrito soup. OUTSTANDING! - 2/7/13

    I make this all the time, I love it with Rotel. I also start with a link of my favorite smoked sausage cut inot bite size pieces. Be sure to get the sausage really brown in the pot, then when you add the chicken broth scape the bottom to get all of the tasty brown bits of flavor. Yum - 9/30/08

    Boy! Sounds like a very simple recipe is open to so many good variations. I'm really not a bean lover, but after these comnemts, I might try it. I like chili, so the scallions and sour cream will be a must -- also just partially mashing the beans so there is some thickness. I might be a convert! - 9/30/08

  • I made this basic recipe but based off the Bush's Black Beans can - their beans are already seasoned so it made it even more awesome... I also added about a cup of frozen corn. Made for a great side to my dinner and will be great lunch tomorrow! - 3/6/08
