2 cans black beans, rinsed & drained
2 cups chicken broth
1 cup salsa
Tips
Change up the flavor by using different flavors of salsa.
Directions
Heat all ingredients in large pot on stove until heated through.
Transfer to a blender or use an immersion blender to puree into a "creamy" black bean soup.
Garnish with fresh cilantro or other herbs.

This is a good basic recipe. I like to add other things to spice it up and give it more of a healthy punch. I saute up about 1/2 c. each of onion, celery and carrots in a bit of butter. Then I add 1 tbsp of cumin. I blend it & add another can of beans to give it a few chunks. Serve w/ sour cream. - 2/2/11

Loved it! I made it with dry black beans, and it took 30 minutes to cook them in pressure cooker (I used about 1.5 cups dry beans + 4 cups water + 1 chicken bouillon cube). After the beans were cooked, I added some chili pepper paste, the salsa and 2 cloves of garlic, then puréed in Cuisinart. YUM! - 9/1/10

I made this tonight after seeing it featured on SP. All I can say is WOW! It was delicious as is. My toppings were 2 tbsp of 0% Greek Yogurt and I added 2 ounces of shredded poached chicken. Next time I might add brown rice with chicken and a little cheese, call it burrito soup. OUTSTANDING! - 2/7/13

Boy! Sounds like a very simple recipe is open to so many good variations. I'm really not a bean lover, but after these comnemts, I might try it. I like chili, so the scallions and sour cream will be a must -- also just partially mashing the beans so there is some thickness. I might be a convert! - 9/30/08
